Apricot Granola Bars - Covent Garden Hotel, London - Elise and Oliver's Favorite

I have been making these granola bars for Oliver since our trip to London in 2015. They remain our favorite granola bar to this day. I am so happy I get to share this with you! These yummy bars also pair well with all types of prepared coffee styles. Enjoy!

Ingredients

  • 3/4 cup Butter OR soya spread
  • 1 1/3 cup honey
  • 2 1/4 cup demerara sugar
  • 4 cups jumbo oats
  • 1 tsp ground cinnamon
  • 1/2 cup pecan halves
  • 1/2 cup raisins
  • 1/2 cup dried cranberries
  • 1/2 cup dried chopped mango
  • 1/2 cup dried chopped apricots
  • 1/3 cup pumpkin seeds
  • 1/3 cup sunflower seeds
  • 1/3 cup ground almonds
  • 1/3 cup sesame seeds

Directions

  1. Melt the butter, honey, and sugar
  2. Boil the mixture until it forms a smooth caramel
  3. Mix all ingredients together and pour the caramel on and mix well
  4. Put into a baking tray ( I lined mine with Parchment paper) and press down
  5. Bake for 15 minutes at 375
  6. Place in the fridge to cool, then cut into bars
