Decaf is for coffee lovers. We work tirelessly to create the best Decaf program in the world.

For this version of Asterisk we teamed up with our producers from Colombia's San Sebastian Project and partnered with Colombian Decaf Plant, La Serenia, where they used raw sugar converted to Ethyl Acetate to extract the caffeine from the coffee. San Sebastian coffees are part of the most complex coffee project we have undertaken, a project intended to develop lasting, quality-focused relationships between farmer and roaster. In order to ensure that we are working in tandem with our growers, the project incorporates a staff cupper in Colombia who works with both farmer and roaster. Hundreds of coffee samples, fresh from harvest, are sent to Olympia Coffee to be cupped every week throughout the two growing seasons in La Plata and multiple farm visits are made each year from the staff of Olympia Coffee. This decaf Colombian coffee selection was made specifically for Decaf Asterisk.

"Once a coffee is in our roastery, we obsess about perfecting the roast for that coffee. We roast coffee by hand (sight, smell, sound) and cup every roast. Each coffee is roasted daily to highlight the 'taste of place' that is unique to each farm and origin. The next day we do it all again, tweaking the roast if necessary to liberate the most distinctive and captivating flavors of each coffee."

    Olympia Coffee has figured out how to consistently produce a decaf coffee that doesn't feel like I have to sacrifice flavor to prevent jitters. I drink way too much coffee to consume all caffeinated, but I also happen to be picky, thanks to Professor Peaberry. Olympia's Decaf Asterisk is satisfying whether brewed in my Aeropress or my Moka Express pot. I highly recommend it for anyone who prefers lighter roasts but doesn't want the caffeine. It's been my favorite for years.

    There is definite chocolate note that makes a great coconut mocha latte. I don't regularly drink dark roasts, but, this one is on the edge of the darker mediums and IS very tasty.

    This was quite good for a decaf! I like to have a second espresso later in the day, and often it's a decaf. I go for Swiss water process and it's tough to find a good decaf. No matter what, the flavor suffers from the decaffeinating process. This was among the best decafs I've had. I will repeat the purchase!
