Guess what’s back? Pacamara Honey! Straight from the La Avila lot, this exclusive brew is crafted just for Klatch Coffee, and it’s here to make your taste buds dance. With every sip, you’ll experience a sweet, aromatic journey through flavors of jicama, plum, and strawberry. The magic doesn't stop there—this silky-smooth cup finishes with hints of sweet green apple hard candy and a touch of sugarcane. A true masterpiece from our amazing Las Mercedes partner, Lucia Ortiz. You won’t want to miss this one!

The Pacamara variety is a hybrid cross between the Pacas (from El Salvador and named after the Pacas Family) and the giant elephant bean varietal "Maragogipe." Its larger than normal appearance is the reason farmers from Las Mercedes call it "The King Bean" of Central America.

More notes from our roasters for coffee connoisseurs: This coffee is more sweet than savory, and a fermentation process of up to 36 hours adds to a smooth body and balanced cup. While some herbal notes expressed as coriander still come through, this is a cleaner and sweeter Pacamara. Up front, the orange acidity is balanced with chocolate, and the body finishes with a smooth sweetness.

This particular coffee is honey processed — the process starts with the skin removal from the coffee fruit immediately after picking, but the beans are dried with at least some of the fruit pulp or “honey” still adhering to them. As a result, the pulp adds sweetness and a bit of a fruit taste to the bean.

As part of Klatch Coffee’s direct trade partnership, 25 cents of every pound of this coffee sold goes to support community sports programs and medical clinics in the Las Mercedes community. Finca Las Mercedes is a beautiful coffee farm with owners dedicated to care for their community, their workers, and the environment with the same care that they invest into their coffee. The Ortiz family provides healthcare, food, and clothing to those in the community that are in need. Las Mercedes is committed to ecological care, making efforts to preserve natural wildlife, to maintain compliance with our certifications in the way that the mill’s by-products are disposed of, and to avoid contamination. In the last few years, the Ortiz family has prioritized preservation by planting native trees.

In doing so, we're able to pay well above Fair-Trade minimums - by at least 25% - and often pay double or triple those prices based on the cup quality. Our buying model is designed to push the envelope of quality coffee by encouraging viable, meaningful careers in specialty coffee agriculture. We only buy Cup of Excellence quality coffee and above, often 90 points or more, and we believe that a farmer that grows such award-winning coffee should be given their due. Through our Klatch Direct Trade model, we have not only simplified the supply chain, but we've also improved the quality and sustainability for farmers and have built long-term relationships with producers in various countries.
