Story
Angela Dominguez's La Bendicion returns to our menu! This is a truly special coffee from a producer who takes great care with her coffee. Every Afternoon during harvest, the carefully selected coffee cherries are de-pulped for this washed coffee.
In the pursuit of clarity and quality, the parchment is put into fermentation tanks where it is aerobically fermented for 16 hours before being rinsed (the washing of washed coffees) four times. Angela uses parabolic solar dryers, and during the next 12 days of drying her team hand-sorts the parchment to remove defective beans.
About the region: The coffee comes from Las Flores village in the Santa Barbara Mountain a mountainous massif of more than 121.3 km2 of surface and maximum height of 2750 meters above sea level, which is mostly a virgin forest reserve declared a national park since 1987.
La Bendicion is located in Santa Barbara, Honduras, near the nationally protected Santa Barbara Mountain which is mostly a virgin forest reserve, lends a unique terroir to Angela's coffee.
With only 1.3 acres in production, a focus on high-yielding and high-quality varieties like this Pacas lot is an essential component of her successful farm. This coffee has a dominant black cherry flavor and subtle tart acidity with naunces of rich nougat and dark chocolate with a clean sweetness reminiscent of white grape.
