Story
Our organic medium dark roast coffee features a notable combination of fruit, chocolate, and spice. Its thick body, mild acidity, and mellow sweetness remind you of the simple joys in life, like drinking coffee or riding a bike.
We created this blend a number of years ago to help support women’s cycling and it has been a big hit. Proceeds from the sale of this coffee go to support local women’s competitive cycling.
La Bicicletta — New Art
Every so often we like to “re-cycle” our La Bicicletta look, a medium dark roast organic coffee dedicated to the celebration of the bicycle and our love for the cycling community. Our new art is from the talented Josh Quick, who has created our sixth La Bicicletta iteration. It’s the same great, organic La Bicicletta coffee you know and love—that notable combo of fruit, chocolate, and spice—but with a fresh look. May the flavor and color palette remind you of the simple joys in life, like drinking coffee or riding a bike.
La Bicicletta’s Work in the Community
La Bicicletta—“the bicycle,” in Italian—has always had a place close to our DOMA hearts. We love bikes. We love people. We love people on bikes. This coffee fuels it all. Our La Bicicletta coffee started as a fundraiser for a local women’s cycling team and has grown to one of our year-round coffee offerings that supports cyclists in multiple states.
Helmet Safety
No helmet? No problem, if you’re a cartoon. They have a way of bouncing back. In real life, we support freedom of choice and we support biking safely. Ride on, friends!

The joke around our house is that number represents how many cups of coffee I’ve made for my wife over the last thirty years. In retrospect, it doesn’t seem like that many. The French Press was my gateway. It lead to Chemex and ceramic drippers. At some point, I added better grinders. There was a commercial espresso machine and grinder in the kitchen, then a Technivorm brewer.
In an effort to simplify, I currently use a Lido hand grinder, a scale and Kalita dripper. One thing that has remained constant is the zen-like moment created each and every time. Pouring the beans into the hand grinder, standing outside to grind so as not to wake anyone, filling the water kettle and then carefully setting everything up while waiting for the water to boil. The motion, the sounds, and smells — really, the whole process — continue to captivate me to this day. With any luck, I’ll be able to almost double that number.
In 1997, my wife Rebecca and I were laying the groundwork for DOMA Coffee Roasting Company; we just didn’t know it at the time. We have known from the start, however, that what we do matters. From the humble beginnings in our garage to our current incarnation, we’ve kept our noses firmly pressed to the grindstone.
Our inspiration is drawn from our local surroundings and travel to coffee-producing countries. We have surrounded ourselves with community-minded artists, thinkers and outdoor enthusiasts who live, work and play in the pristine landscape of the North Idaho Panhandle.
DOMA is named after our two sons, Dominic and Marco. Our logo with ‘The Man’ is a picture of my father at the beach in Coeur d’Alene in the 1940’s with the Playland Pier in the background.
Along with community and family values, roasting at DOMA combines science and craft. Our lead roaster, Jim Hottenroth, holds a chemistry degree, a background he puts to good use. Each small-batch is methodically trialed, tested and recorded in order to obtain flavorful, consistent roasts.
We are proud of our packaging, displays and promotional work, but it’s what happens ‘off label’ that sets DOMA Coffee Roasting Company apart. As third-generation family-owned business people, we value inclusive decision making in our day-to-day operations with staff. We maintain open communication with employees and actively empower them to contribute ideas and provide feedback. We work hard to better our communities — both local and global — through philanthropy and outreach. Most importantly, we strive to improve our knowledge of the industry and business practices.
We are passionate about small batch roasted coffee — and we’ve built a life around this passion. Our dedication to the craft and our commitment to sustainability connects DOMA to our customers. That dedication and passion will allow us to continue roasting quality coffees for generations to come.

At DOMA Coffee Roasting Company, our mission is not only to roast the finest quality coffee, but to use business as a springboard to make the world a better place. Our tagline, “Coffee | Culture | Meaning,” is much more than a slogan—it’s a set of closely interconnected principles we have refined during our past decade of business. In a nutshell, these principles include...
A devotion to handcrafted sustainability that extends to our roasting, purchasing, and operational practices.
A passion for building a more just and sustainable world, not only in our community and region, but in the source countries where we do business.
Building transparent, direct relationships with farmers that go above and beyond the standards of fair trade.
Cultivating a leadership role in our business community and our industry as a sustainable business.
Coffee
We reject the notion that social justice and quality coffee is a balancing act. Rather, by paying above fair-trade prices and working directly with our farmer suppliers, we gain access to the best commodities. We are not only members but leaders in Cooperative Coffees. This green bean importing collective, where we buy 80 percent of our beans, is made up of 23 other small-scale roasters who share our commitment to quality and to direct relationships with growers. Co-op Coffees always pays producers well above the standard price for fair trade coffee, while working with grower cooperatives that are certified fair trade and organic. A key component to the co-op is transparency. To that end, we give customers access to the direct paper trail for every coffee transaction through www.fairtradeproof.org.
We roast these high-quality beans with extreme care, working in small batches in our high-efficiency, high-control Loring Smart Roast roaster. We were one of the first companies in the U.S. to purchase a Loring, and while we were guided by our desire for energy efficiency, the roaster offers superb control during our small-batch roasting process.
Our desire is to let each coffee speak for itself and to honor the process and region it comes from. We feel it is our responsibility as roasters to bring out the best in any particular coffee, to roast to the coffee’s full potential so that the bean’s innate qualities are expressed.
Our passion for quality leads us to constantly experiment with new brewing equipment, and we’re frequently among the first in the nation to roll out new equipment. Our cupping and training lab consistently showcases state-of-the-art equipment. We were the first in the U.S., for instance, to use the Kees van der Westen Mirage espresso machine.
Culture
In addition to our work with Cooperative Coffees, DOMA invests time, energy, and money in building a better world. Far from detracting from our primary mission of providing excellent coffee, a commitment to sustainability serves our quality goals. As a result, our sustainable practices are inseparable from our business practices as a whole. In part, this is a reflection of our personal values, but it also reflects our belief that a well-planned sustainability program results in higher quality coffee and better business results.
An example is our company giving program. DOMA provides a 10 percent program to non-profit organizations that meet our criteria for environmental stewardship. Our relationship with these recipients, however, goes far beyond financing. We produce coffees and packaging especially designed to promote their work; we attend their events and workshops and promote them on our blog; we get involved on a personal level and encourage our customers to do the same. We hear from these groups that we support that the relationship is rich and helpful.
Meaning
While it may be more abstract than building direct-trade relationships with farmers or sourcing environmentally friendly packaging, every business decision we make can be traced to a single notion—passion. We bring passion to building meaningful, lasting relationships with growers in far-flung corners of the globe… We bring passion to identifying the perfect roast for their beans… We passionately try to make the world a better place by building sustainability into our fundamental practices and our charitable giving… We honor—and place at the center of our work—the passion we bring to our lives as husbands, wives, fathers and mothers, employers and employees, coffee roasters and drinkers, artists, and lovers of the world. At the end of the day, we’re providing an exceedingly enjoyable beverage to customers who appreciate our work. It’s a little thing, but it’s something to be passionate about.

This is my favorite coffee from GoCoffeeGo website. I normally drink espresso, but I will drink this over my normal espresso. It’s really balanced, but not over roasted. Best I’ve tried yet.
